Smart ground crumbles (any meatless crumbles/can sub 4-6 oz. ground turkey)
1/2 cup
Olive oil
1 teaspoon
Taco seasoning
1 teaspoon
Cooked corn
1/4 cup
Cooked brown rice
1/4 cup
Black beans, rinsed
1/4 cup
Romain lettuce, chopped
1 cup
Mixed greens
1 cup
Cherry tomatoes, cut in halves
1/4 cup
Mexican shredded cheese
1 ounce
Salsa
2 tablespoon
Hot sauce (optional)

Directions

Heat oil over medium heat in a pan, add ground crumbles.

Add taco seasoning. Cook and stir for 4-6 minutes.

In another medium size bowl, add romaine, mixed greens, beans, tomatoes and shredded cheese, toss to combine.

Transfer to bowl, add corn, rice, cooked ground crumbles, salsa and top with hot sauce if desired.
