Tropical Delight Vegan Overnight Oatmeal

Overnight oats are the easiest way to start your morning! Packed with fiber, healthy fat, and flavor; overnight oats will soon become your new breakfast obsession.  These oats are dairy free, gluten free, and vegan; perfect for any lifestyle!

 

Serves 1straw banana oats

OPN Conversion: 2 starch + 1 fruit + 1 dairy + 2 fat + 1 condiment

Ingredients:

  • 1/2 cup old fashioned oats, uncooked
  • 1 cup almond or soy milk
  • 1/4 cup diced strawberry
  • 1/4 cup diced banana
  • 1/2 cup diced pineapple
  • 2 tablespoon coconut flakes

Instructions:

  1. Add oats and soy/almond milk to a glass container. 
  2. Whisk
  3. Add strawberries, banana, and pineapple.  Top with coconut flakes.
  4. Store overnight and enjoy!
