OPN Conversion: Makes about two 1 cup servings = 1 starch + 1 veg + 2 fat
- 1 can chickpeas, drained & rinsed
- 1 cucumber, chopped
- 1/2 of a large red onion, diced
- 1 bell pepper, chopped
- 2-3 tomatoes, cut into chunks
- 10-12 basil leaves
- 1 tbsp sesame oil
- 1 tbsp sesame seeds
- 1 tbsp balsamic vinegar
- Salt, pepper & garlic powder, to taste
- Combine all ingredients in a large bowl.
- Toss to coat.
- Adjust seasonings as needed.
