  • Yellow onion, diced
    1 onion
  • Medium carrots, diced
    3 carrot
  • Garlic cloves, minced
    4 clove
  • Medium golden potatoes, diced
    6 potato
  • Red bell pepper, diced
    1 pepper
  • Jalapeños, seeded and diced
    2 jalapeno
  • Frozen corn
    2 cup
  • Vegetable broth
    4 cup
  • Unsweetened plain almond milk
    2 cup
  • Sriracha
    1 tablespoon
  • Paprika
    1/2 teaspoon
  • Thyme

Directions

    Heat olive oil in a large pot, add carrots, onions ad garlic, saute until onions become translucent.

    Add in potatoes and peppers, saute for 2-3 minutes.

    Add in corn, broth, almond milk and seasonings.

    Bring to boil then simmer on med-low for 1 hour until potatoes are fully cooked.

    Taste and adjust with additional preferred seasonings (more sriracha if you prefer more heat!).
