Rainbow Spaghetti

If you're looking for a new way to add vegetables to your child's diet, try adding veggies to their spaghetti along with food coloring to make it more fun! Shhh, we won't tell them they're eating spinach with their pasta!

OPN Conversion: 1 cup = 2 starch

Ingredients:

  • 16 oz whole wheat spaghetti
  • 1 medium sized cooked beet
  • ¼ cup fresh or frozen blueberries
  • ½ cup frozen spinach
  • 1 tsp ground turmeric
  • 1 cup of water

Instructions:

  1. Prepare spaghetti according to package instructions
  2. Combine beet with 1-2 tbsp of water in a blender cup, combine until smooth, set aside.
  3. Combine blueberries with 1-2 tbsp water in a blender, combine until smooth, set aside.
  4. Combine spinach with 3-5 tbsp of water in a blender, combine until smooth, set aside.
  5. Combine turmeric with 1-2 tbsp of water in a blender, combine until smooth, set aside
  6. Divide cooked and drained spaghetti into 4 mixing bowls
  7. Add 3-5 teaspoons of each color to divided spaghetti
  8.  Mix well and serve with your favorite sauce and veggie loaded turkey meatballs!
    ** Note: you only need enough water in the blender until mixture appears smooth
