  • Brussel sprouts, finely chopped
    1 pound
  • Pomegranate seeds
    1 cup
  • Sliced almonds
    1/2 cup
  • Tahini
    1 tablespoon
  • Maple syrup
    1 tablespoon
  • Red wine vinegar
    1 teaspoon
  • Olive oil
    1 teaspoon
  • Dijon mustard
    1 teaspoon
  • Salt
    1 pinch
  • Pepper
    1 pinch
Directions

    Saute shredded brussel sprouts in a bit of oil over medium heat until they begin to brown.

    In a separate bowl, make the dressing by combining tahini, maple syrup, red wine vinegar, olive oil, mustard, salt and pepper.

    Remove brussels sprouts from heat, transfer to larger mixing bowl. Add pomegranate seeds and almonds, gently mix.

    Add dressing, thoroughly coat ingredients. Serve chilled.
