Mushroom Quinoa Bowl

If you're looking for the perfect base to your protein bowl, this is it! Since quinoa has all of the amino acids, this is already a good source of protein but will become even more enhanced by adding tofu, chicken, turkey, fish, or whatever your heart desires. On top of that, who doesn't love a little umami flavor?

Ingredients
2 servings

  • Baby bella mushrooms, sliced
    1 pint
  • Garlic, minced
    2 clove
  • Olive oil
    2 teaspoon
  • Fresh spinach
    2 cup
  • Quinoa, cooked
    1 cup
  • Salt
    1 pinch
  • Pepper
    1 pinch
  • Garlic powder (optional)
    1 pinch
  • Chili flakes (optional)
    1 pinch
Directions

    Heat olive oil in a large skillet over medium-high heat.

    Add mushrooms and garlic, saute ~5 minutes until mushrooms are soft.

    Lightly season. Add fresh spinach, reduce heat, cover and allow spinach to wilt (do not overcook).

    Fold in quinoa and adjust seasonings as desired (we like to also add a drizzle of hot sauce on top for an added kick!)

    Divide into two equal servings. Enjoy!
