Low FODMAP Egg Muffins

Ingredients:

  • 8 eggs
  • 2 cups chopped baby spinach
  • ½ cup raw red pepper
  • ¼ cup feta cheese
  • Salt and pepper as desired

Instructions:

  • Preheat oven to 350 degrees Fahrenheit
  • Crack all eggs into a bowl and mix beat well
  • Add in vegetables, cheese, desired spices, mix well
  • Pour mixture into muffin tin, should fill about 12 muffin wells
  • Baked at 350 degrees for 15-20 minutes until middles are solid and muffins are cooked through.
  • Enjoy cold or reheated
