Low FODMAP Banana Pancakes

Pancakes and the weekend just belong together, and who are we to stop you?! Try this recipe for a lighter version with cleaner ingredients than any mix you'll find on the store shelf!

Ingredients:

  • 1 Banana
  • 2 Eggs
  • 1 Tbsp oats or oat flour
  • 1 Tbsp almond or peanut butter
  • 1 tsp vanilla extract
  • Cinnamon to taste

Instructions:

  • Mash banana in bowl or pulse in food processor until it’s pureed
  • Add the 2 eggs and mix until a pancake batter texture forms
  • Add in the flour, nut butter, vanilla extract and cinnamon
  • Pour ¼ of mix in pan and flip once golden brown

Serves: 1 (Makes about 4 pancakes)
