If you're like us and like to have a plan for the upcoming week, check out this super easy meal prep idea. We kept ours veggie but we recommend adding a serving of ground chicken or turkey to increase the protein per serving! We whipped up the quinoa mix in the Instant Pot and it was so quick and easy. Hope this inspires you to get planning a little early for next week.

Ingredients

  • Quinoa, rinsed
    1 cup
  • Black beans, drained and rinsed
    1 (15.5 ounce) can
  • Corn, drained
    1 (15.25 oz) can
  • Water
    1 cup
  • Salsa
    1 cup
  • Salt
    1 teaspoon
  • Taco seasoning
    1 tablespoon
  • Cumin
    1 teaspoon
  • Black pepper
    1/4 teaspoon
  • Mixed greens
    8 cups
  • Red bell pepper
    4 pepper
  • Cheddar cheese, shredded
    1 1/2 cup
Directions

    Combine quinoa, black beans, corn, water, salsa salt, taco seasoning, cumin and black pepper in instant pot and stir. Close lid and set vent to "sealing" position.

    Cook at high pressure for 2 minutes. Let pressure release naturally for 10 minutes, then release manually. Once finished, open and fluff mixture.

    In large salad bowl, combine 2 cups mixed greens, 1 diced red pepper and 1/4 cup shredded cheddar cheese.

    Top salad mixture with 1 cup salsa, quinoa mixture.

    Top with favorite dressing and enjoy!
