Florentine Hash Skillet

Egg white omelet and pots-401627-editedMake your breakfast sizzle with this skillet complete with eggs, hashbrowns, and spinach.. Sure to be a weekend staple!








Makes 1 serving

OPN Conversion: 1 starch + 1 dairy + 1 fat


1 tsp extra-virgin olive oil

•½ cup frozen hash browns or precooked shredded potatoes

•½ cup frozen chopped spinach

•1 or 2 large eggs

•¼ cup shredded sharp cheddar cheese

•Salt and pepper to taste


1. .Heat oil in a small nonstick skillet over medium heat.  Layer hash browns and spinach into the pan

2. Crack egg on top and sprinkle with salt, pepper and cheese

3. Cover, reduce heat to medium-low and cook until the hash browns are starting to brown on the bottom, the egg is set and the cheese is melted, 4-7 minutes
