Fennel Roasted Carrots

fennel carrots-643315-editedFor an extra fiber boost, turn to fennel! Benefits also include relief from anemia, indigestion, and constipation. Pair fennel with carrots in this recipe for a nutritious side!


Makes 2 Servings

OPN Conversion: 1 vegetable + 1 fat


  • 4-8 carrots, depending on size, peeled and sliced into 1 inch pieces

  • 4 small shallots, sliced in half

  • juice of blood orange

  • 2 1/2 teaspoons of fennel seeds

  • salt and pepper

Toppings (optional)

  • sesame seeds

  • thinly sliced apple

  • scallions


  1. Preheat oven to 375F.

  2. In a small pan, over medium-high heat, roast fennel seeds for about 5 minutes. Stir throughout.

  3. Once roasted and cooled, grind in a mortar and set in a small bowl.

  4. Add a decent amount of EVOO, salt, and pepper to bowl and mix.

  5. In a bigger bowl, add the carrots and shallots. Add EVOO and fennel mixture to carrots and mix thoroughly.

  6. Add to a baking sheet and roast for 25-30 minutes, depending on size of carrot.

  7. Once roasted and cooled add to a serving bowl. Drizzle blood orange juice on top of carrots.  Add sesame seeds, scallions, and cut apples.
