Ingredients

  • Carrots, peeled and sliced into 1 inch pieces
    8 medium carrot
  • Shallots, sliced in half
    4 small shallot
  • Blood orange
    1 orange
  • Fennel seeds
    2 1/2 teaspoon
  • Salt & Pepper
    1 pinch
  • Sesame seeds
    1 pinch
  • Scallions
    2 stalk
  • Olive oil
    1 tablespoon

    Preheat oven to 375° F.

    In a small pan, over medium-high heat, roast fennel seeds for about 5 minutes. Stir throughout.

    Once roasted and cooled, grind in a mortar and set in a small bowl.

    Combine olive oil, salt, and pepper in bowl and mix.

    In a larger bowl, combine the carrots and shallots. Add olive oil and fennel mixture to carrots and mix thoroughly.

    Add to a baking sheet and roast for 25-30 minutes, depending on size of carrot.

    Once roasted and cooled add to a serving bowl. Drizzle blood orange juice on top of carrots. Add sesame seeds and scallions.
