Cold Couscous Salad

OPN Conversion: 3/4 cup = 1 starch + 1/2 veg + 1 fat 


  • 1 1/2 cups cooked Israeli couscous
  • 2 cucumbers, cut into quarters
  • 1/2 red onion, chopped
  • 1 lemon, juiced
  • 2 tbsp olive oil
  • 1/4 tsp garlic powder
  • 1/4 tsp salt 


  1. Cook couscous according to package instructions then run under cold water to cool, let drain.
  2. Combine couscous, cucumbers and red onion, mix. Mix in olive oil, lemon juice and seasonings. Gently stir to combine.
