OPN Conversion: 3/4 cup = 1 starch + 1/2 veg + 1 fat
- 1 1/2 cups cooked Israeli couscous
- 2 cucumbers, cut into quarters
- 1/2 red onion, chopped
- 1 lemon, juiced
- 2 tbsp olive oil
- 1/4 tsp garlic powder
- 1/4 tsp salt
- Cook couscous according to package instructions then run under cold water to cool, let drain.
- Combine couscous, cucumbers and red onion, mix. Mix in olive oil, lemon juice and seasonings. Gently stir to combine.
