Ingredients

  • Egg
    1 egg
  • Coconut oil, room temperature (or omit & swap with olive oil for Low FODMAP)
    1/2 cup
  • Peanut butter
    1/4 cup
  • Light brown sugar
    1/2 cup
  • Maple syrup
    2 Tablespoon
  • Almond flour (or omit & swap with oat flour for Low FODMAP)
    2 cup
  • Baking soda
    1 teaspoon
  • Salt
    1/4 teaspoon
  • Dark chocolate chunks
    1/2 cup
Directions

    Preheat oven to 350° F.

    In a large mixing bowl, whisk together egg, oil, sugar, peanut butter and maple syrup.

    Add almond flour, baking soda and salt. Mix thoroughly to combine. Fold in chocolate chunks.

    Line cookie sheet with parchment paper or silicone baking mat.

    Using a cookie scoop or spoon, place dough balls two inches apart.

    Bake for 10 minutes or until lightly browned on top.

    Remove and sprinkle with sea salt.
