Banza Bowtie Pasta Salad

20191002_203630980_iOSWhat better way to contribute to your next gathering than with a nice cold pasta salad filled with all of our favs?! Or meal prep this for the week. It's so quick and easy! 

OPN Conversion: 1 1/4 cup = 1 starch + 1/2 protein + 1 veg + 1/2 dairy + 1 fat

Serves: 5-6


  • 1 box @eatbanza bowties, cooked according to package then ran under cold water
  • 1 small red onion, chopped
  • 1 red bell pepper, chopped
  • 1 cucumber, quartered
  • 1/2 cup low-fat feta cheese
  • 1 pint cherry tomatoes
  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 lemon, juiced
  • 2 tbsp fresh chopped parsley
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp garlic, minced
  • Green onion, for garnish


  1. In a large bowl, add cooled pasta, onion, bell pepper, cucumber, feta and cherry tomatoes.
  2. In a small mason jar with a lid, add oil, red wine vinegar, parsley, salt, pepper and garlic, put on lid and shake until well combined.
  3. Pour dressing over pasta salad and mix to combine. Adjust seasonings as needed. Top with chopped green onion.
