Serves: 5-6 (1.5 cup serving)

- 2 cups coleslaw mix
- 1 heaping cup shredded purple cabbage
- 2 cups shredded carrots
- 1 cup chopped cucumber
- 2 cups cooked shelled edamame
- 1 cup fresh cilantro, chopped
- 1 cup roasted cashews⠀⠀⠀⠀⠀
- 1/4 cup olive oil
- 2 tbsp white vinegar
- 2 tbsp sesame oil
- 1 tbsp pure maple syrup
- 1-2 tbsp sriracha
- dash of salt
- dash of garlic powder
- Whisk together dressing ingredients.
- In a large bowl, toss salad ingredients together. Add dressing, toss to coat.
