Asian Edamame Salad

If you want an interesting spin on the traditional salad, try this crunchy, tasty salad that will be a hit at this weekend's BBQ, picnic, or pot luck. We promise it won't disappoint!
Serves: 5-6 (1.5 cup serving)
OPN Conversion: 1 starch + 1/2 protein + 1 veg + 2 fat + 1 condiment ⠀⠀
Ingredients: 
  • 2 cups coleslaw mix 
  • 1 heaping cup shredded purple cabbage
  • 2 cups shredded carrots
  • 1 cup chopped cucumber
  • 2 cups cooked shelled edamame
  • 1 cup fresh cilantro, chopped
  • 1 cup roasted cashews⠀⠀⠀⠀⠀
Spicy Asian Dressing
  • 1/4 cup olive oil 
  • 2 tbsp white vinegar
  • 2 tbsp sesame oil 
  • 1 tbsp pure maple syrup 
  • 1-2 tbsp sriracha 
  • dash of salt
  • dash of garlic powder
Instructions:
  1. Whisk together dressing ingredients. 
  2. In a large bowl, toss salad ingredients together. Add dressing, toss to coat.
