Almond Butter Noodle Bowl

Serves 4

OPN Conversion:  1/2 protein + 2 starch + 1 vegetable + 2 fat 

  • 2 cups cooked brown rice pasta (or whole wheat or chickpea)
  • 1 zucchini, spiralized
  • 2 large carrots, spiralized
  • 1 can chickpeas, drained & rinsed
  • green onions, for garnish
  • sesame seeds, for garnish
    Dressing: 
  • 1/4 cup almond butter
  • 2 tsp ginger, minced 
  • 2 cloves garlic, minced
  • 1 tbsp sesame oil 
  • 1 tbsp chili garlic sauce 
  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce 
  • 1 tbsp maple syrup
  • 2 tbsp water

Instructions:

  1. Cook pasta according to package. Rinse and set aside to cool.
  2. Whisk together all dressing ingredients. Add chickpeas, veggies, and cooled pasta to bowl.
  3. Drizzle with dressing and garnish with sesame seeds and green onions.
